  1.                      CHICKEN ENCHILADA BAKE

  4. 2 T. margarine
  5. 1/2 c. chopped onion
  6. 1 minced garlic clove
  7. 1/2 c. sliced ripe olives
  8. 4 oz. diced green chilies
  9. 1/2 c. sour cream
  10. 1 can condensed cream of chicken soup
  11. 1-1/2 c. cubed cooked chicken or turkey
  12. 4 oz. shredded cheddar cheese
  13. 8 corn or flour tortillas
  14. 1/4 c. milk
  15.  
  16.           Saute onion and garlic in margarine.  Stir in next four
  17. ingredients, reserving 1/2 the olives.  Reserve 3/4 c. sauce. 
  18. Add chicken to remaining sauce, add 1/2 of the cheese.  Warm
  19. tortillas.  Fill and roll up.  Place seam side down in ungreased
  20. 12 x 8 baking dish.  Combine reserved sauce and milk and spoon
  21. over tortillas.  Bake at 350 degrees for 30 to 35 minutes. 
  22. Sprinkle with remaining cheese and olives.
